US ostrich farmers are finding new customers in those who are now allergic to red meat because of tick bites known as AlphaGal syndrome. Ostrich meat is red when raw and has a taste similar to beef, but it's bird. Kentucky farmer Brent Williams was diagnosed seven years ago with AlphaGal. The people that have AlphaGal that I talk to, that have tried an ostrich burger. Most of them are almost in tears. Only because it's like you just don't know how bad I miss this. So he was eager to get into the ostrich business when W.D. King proposed raising them on his central Kentucky farm. AlphaGal is the main driver. That is what's driving the ostrich market. There are about 10 to 15 ostrich farms in the US dedicated to raising the African native birds that don't taste like chicken and don't come cheap. I'm Julie Walker.
